It took me a while to like custard. As a child I shied away from the yellow stuff without ever tasting it, and then one day I took the plunge and never looked back! From traditional pouring custard (not too runny please), to thick and rich crème pâtissière and let’s not forget ice cream, there are so many ways to love custard. And now here’s another! Burning the honey turns it into caramel with a delightfully floral taste, to adorn the delicately flavoured set custard.

Apple Crumble Cake

Apple Crumble Cake ASome call it coffee cake (hate coffee!), some call it streusel cake (yeah, I like that…), I’ll call it crumble cake (spot on!). Crumble is undoubtedly one of my favourite puddings, and you can make it with whatever fruit you like, although I’ll say classic apple is best. Call me classic, I don’t mind. So of course, this take is straightforward and simple, combining a vanilla and cinnamon sponge with sweet caramelised apple and crunchy golden crumble. It’s like a hug in bowl, well… with plenty of custard it almost is!

Chocolate, Hazelnut and Caramel Swiss Roll

The thing I love about swiss rolls is that they are pretty simple to make and the flavour combinations are endless. Following on from my Passion Fruit Swiss Roll here’s a much richer version for all the chocolate lovers out there. The hazelnuts not only add that nutty flavour that goes so well with chocolate but they also add a lovely crunch, giving the roll even more depth.
