I love how well cardamon goes with white chocolate; it’s another of those cross-over ingredients that works in both sweet and savoury (along with lemon and my beloved ginger). Cardamon is very pungent so I’ve given a range for the amount to use in this recipe. If you want more of a subtle flavour then use 5 pods, and if you want more of a hit use 8.

Strawberry & White Chocolate Cheesecake

Strawberry & White Chocolate Cheesecake

Although no baking is required in this recipe, I had to share it as this cheesecake is simply irresistible. Fresh strawberries and creamy white chocolate combine with cream cheese and shortbread biscuits to form this dessert that is great all year round – especially on a summer’s day! I made it for a gift to bring to our neighbour’s barbecue and it went down a treat – in fact there wasn’t enough!

White Chocolate & Ginger Cheesecake

When I first joined twitter (which was some time ago now) I ran a competition for a recipe using my favourite ingredient stem ginger. The prize was to have the recipe featured on my blog and lo and behold here it is! The winner was @softdumplings whose idea paired my ingredient with white chocolate in the form of a cheesecake. I had to make it twice before perfecting it as baked cheesecakes have a tendency to overcook when not surrounded by a water bath (do make sure to use hot water other the cheesecake will take longer to cook). I would love to say I’m now gonna sit back and have a slice of this but it’s already finished! Click here for the recipe


Chocolate & Pistachio Cookies

I think everyone likes a good cookie right? Lovely dense chewy thing, packed with flavour mmmmm. Well here’s my take on chocolate chip cookies – something I was requested to post a recipe for a while back, but I though I’d do some a bit more special than simple chocolate chip. Not to say you can’t just omit the pistachios, swap the cocoa for 20g more self-raising flour and use milk chocolate instead of white – that probably sounds a bit more complicated than it should but you get my gist. Chocolatiers’ Shortbread

During this time of fervent revision when the library is open 24 hours and many students are in ‘constant study’ mode, I’ve found myself baking – somehow not a big surprise. I think traybakes are really homely and it doesn’t usually take much effort to create something delicious looking and delicious tasting (the proof for me being that I had all the ingredients without knowing I was gonna make it!). This is my take on Millionaires’ Shortbread, those lovely layers of shortbread, caramel and chocolate, transformed for all the chocolate lovers out there! I wouldn’t call myself a chocolate addict, but a part-time fanatic, yes, maybe. Click here for the recipe


Mint Choc Tarts

I was in a bit of baking mood and thought I’d make some mini tarts. Since I was a child I’ve enjoyed Feast ice lollies with the crisp, cold piece of chocolate hidden in the middle and will never cease to love the mint version, so I decided to put it into tart form. The recipe is pretty simple (simple is always a good thing!) but the results are really tasty and would be fantastic on any occasion. Chilling the finished tarts is important as it not only enhances  the minty freshness but it allows the filling to set (although if you can’t wait to try them – like me – I’m  sure you won’t mind the filling spilling out and onto your hands!). The amout of pastry makes exactly 12 cases so you’ll have to re-roll the trimmings! Click here for the recipe
