These unsuspecting biscuits are based on the Austrian Linzertorte, made with almond pastry and filled with raspberry compote. The surprise is that despite the sprinkling of icing sugar they look like plain old biscuits but the crumbly pastry, spiced with cinnamon, hides a sweet raspberry filling! Click here for the recipe

These mini tarts are perfect if you’re having a dinner party and want to serve a selection of mini desserts. The flavours are intense, yet the package small so one feels indulgent but not greedy. Serve at room temperature if you’re short on time or want a filling you can dip your finger in. I was recently invited to do a demo at Ealing Hammersmith and West London College for their catering students and absolutely jumped at the opportunity. There’s something about working with young people that enthuses me. Their passion, their zeal and of course their inquisitive nature. Seeing as the students were studying to become professional chefs I had to push the boat out a bit and came up with what you could call this an enlarged version of my Lemon & Raspberry Cupcakes. This flavour combination is one of my favourite and thankfully got thumbs up all around. The recipe is rather long but not very complicated, it’s just about preparing the individual components and bringing them together with a chef’s dusting of icing sugar! *And yes, there’s a raspberry missing from the slice in the photo… Click here for the recipe
A few weeks ago I was kindly invited to an interview at the headquarters of London Student Magazine – for those who don’t know that means the Student Union of the University of London! It was good to be on university grounds again and talk about what I love best with people who share that passion (Helena and Eve – check out her blog here). I’ve been baking a lot of cupcakes recently, trying my hand at as many different flavours as possible in order to stretch my creativity (and of course tantalise my tastebuds!). The inspiration for these came pretty easily on one of my regular visits to the supermarket. I spotted a bottle of pink lemonade on the shelf and quickly made my way to the fruit & veg section in search of raspberries (I already had the lemon curd!). The recipe isn’t much different to my Apple & Cinnamon Cupcakes or my Birthday Cupcakes as I’ve developed a base recipe that only needs a few tweaks to create something very impressive but with little effort.
